Here are some of my most beloved recipes!

I encourage you to play around with these; swap ingredients if they don’t work for you and add in whatever you feel is right! Enjoy the process as much as you enjoy the product!

 

CHOCOLATE SUGAR COOKIES

INGREDIENTS:

  • 2 cups of flour
  • 3/4 cups of cacao powder
  • 1 tsp baking soda
  • 1/3 tsp salt
  • about 1 cup of butter
  • about 1/2 cup of oat milk
  • 2 cups of organic sugar
  • 1 tsp of vanilla
  • crystalized sugar

DIRECTIONS:

  • preheat oven to 350
  • combine wet ingredients in mixer
  • combine dry ingredients in separate bowl and whisk well
  • slowly add dry ingredients to wet ingredients
  • form balls about 1 Tbsp
  • roll cookie dough in crystalized sugar (do not skip this step and make sure it is crystalized sugar I promise it makes all the difference)
  • bake for 10-12 minutes and let cool (or don’t)

CARDAMOM CHOCOLATE CHIP COOKIES

INGREDIENTS:

  • 1 cup of butter
  • 3/4 cups of brown sugar
  • 1/3 cup of organic sugar
  • 2 1/4 cups of flour
  • 1 tsp of baking soda
  • about 1/2 cup of oat milk
  • 1 cup of chocolate chips
  • 1 tsp of ground cardamom

DIRECTIONS:

  • preheat oven to 350
  • beat 1/2 cup of butter with sugars
  • melt 1/2 cup of butter until browned and ~aromatic~, then combine with sugars
  • in a separate bowl, whisk all dry ingredients except cardamom because she is a queen who requires her own step
  • slowly add dry ingredients to wet ingredients
  • once well combined, add in cardamom and smile while you do so because she is the star of the show
  • form into 1 Tbsp balls
  • bake for 10-12 minutes and let cool (or don’t)

NO BAKE TWIX BARS

INGREDIENTS:

  • BASE: 1.5 cups of flour, 4 Tbsp coconut oil, 2 Tbsp oat milk
  • MIDDLE: 7 chopped dates, 3 Tbsp peanut butter, 2 Tbsp oat milk, 1 Tbsp sugar
  • TOP: 1 Tbsp coconut oil, 2/3 cups of chocolate chips

DIRECTIONS:

  • mix base layer and press into a pan, store in refrigerator
  • blend middle layer (if not reaching smooth, add more milk/pb) and pour over base. Store back in refrigerator
  • melt coconut oil and chocolate and pour over pan. Let chill and cut into bars

CAMPFIRE COOKIES

INGREDIENTS:
  • 1/2 cup of butter
  • 1/3 cup of oat milk
  • 2 tsp vanilla
  • 1.5 cups of sugar
  • 2 cups of flour
  • so many chocolate chips, i’ll let you decide
  • mini marshmallows (Vegan ones are sold by the brand Dandies!)
DIRECTIONS:
  • preheat oven to 350
  • beat butter, sugar and vanilla until creamy
  • slowly add in flour
  • once blended, add in chocolate chips
  • bake for about 7-8 minutes or until halfway done
  • take them out of the oven and place mini marshmallows on top
  • broil for 30 seconds-1 minute (keep a close eye because they will want to catch!)
  • add more chocolate chips to top
  • gather ’round the fire
