Inspirations from Land and Sea: The Fifth Season’s Chef Erik Orlowski with selected wines
Location: Wang Center Room 301
Time: 6:30- 8:00 pm

What happens when a chef takes his inspiration from the land and sea around him and builds a menu that changes to match the seasons? Come discover the bold, pure flavors of The Fifth Season restaurant’s chef Erik Orlowski, whose food put him among Zagat’s top five New American Restaurants on Long Island for 2007/2008. Add to these pristine tastes an artful pairing of regional wines, and find the rewards of being a locavore for yourself. This will be a paired, seated tasting with a presentation/demonstration by the chef. Prior to opening The Fifth Season, Chef Orlowski worked with many of New York City’s star chefs/restaurateurs, including Allen Susser and Pino Luongo. In 2004, he and his wife Jennifer fulfilled their long-time dream of opening a restaurant that followed the seasons. Initially located in Greenport, they moved the Fifth Season to Port Jefferson to accommodate more of their happy, appreciative patrons.

Grey Horse Tavern’s Chef Steve Cardello and Bedell Cellars
Location: Wang Center Room 301
Time: 6:30- 8:00 pm
Fee: $50.00 per session per person, or $135.00 for the entire series

Since the late 1970’s, an authentic Long Island cuisine has been emerging as regional chefs increasingly source their food locally and offer wines grown in the same soils. This tasting will feature one of Long Island’s earliest established wineries, Bedell Cellars and one of our newest regionally inspired chefs, Steve Cardello of the Grey Horse Tavern. Having learned in the kitchens of his two beloved grandmothers, Chef Cardello features home-style, “real” food in his much-acclaimed new tavern in Bayport, where a sign on the window reads “No Farms No Food.” He supports local farms and sustainable fisheries, serving only natural and humanely raised meats and dairy items. Bedell Cellars is known for its state-of-the-art facilities, its owner Michael Lynne’s art collection, and its sophisticated wines, including many innovative blends. This tasting will offer wine and food pairings designed to surprise, please, and titillate your palate.

A Taste of Spain with Miguel Martin, winemaker at Palmer Vineyards
Location: Wang Center Room 301
Time: 6:30- 8:00 pm

Professional winemaker Miguel Martin will share his broad knowledge of wines from his native country by choosing appropriately delicious pairings of regional Spanish wines and cheeses. From Jerez to Galicia, Spain’s diverse climates offer an exciting contrast of flavors and aromas. A native of Seville, Martin graduated with a degree in Agricultural Engineering from the University of Madrid, then came to the United States, where he worked, first on Long Island, then in Carmel and Lodi, California, making white wines for Robert Mondavi’s Woodbridge. From 2002-2006, he returned to Spain, where he made red wines and Cava (sparkling wine) in Catalunia, then worked with Gonzalez Byass on a new venture in La Mancha. In 2006, he returned to Long Island as head winemaker at Palmer Vineyards. This will be a seated, guided tasting by an expert winemaker whose love of his country and its products will inspire you to explore wines’ dimensions further.

Refunds: Refunds are not available for missed sessions. Refunds for the course can only be issued if request is received 3 days prior to the start of class.
Course Requirements: Attendees must be over 21 years of age. The instructor reserves the right to exclude participation of any attendee who abuses the privilege of wine tasting. All participants must sign the standard New York State “Hold Harmless” waiver for wine education class participation.
